奈良の日本酒は、日本酒造りの原点となった地ならではの伝統技術と歴史を受け継ぎ、清らかな山の湧水と良質な酒米を活かして丁寧に醸されることで、澄んだ香りと米の旨みが調和した奥行きのある味わいが特徴です。
また、古都の文化や寺社との深い結びつきが酒造りに息づき、生酛づくりをはじめとした職人技が多彩な個性を生み出している点も奈良酒の魅力です。

生酒が升に溢れるほど注がれるのは、
❝もっきり❞(盛り切り)という❝気前の良さ❞を示す伝統的な提供法に加え、
木の香りとの相性や鮮度を味わう特別感を引き立てるためです。

The Origin and Future of Sake

Nara sake embodies the essence of Japan’s sake-brewing heritage. Crafted with traditional techniques passed down through generations in the birthplace of sake making, it utilizes pristine mountain spring water and premium sake rice. The result is a refined flavor profile characterized by clean aromas and a harmonious balance of rice umami with remarkable depth. The deep connection to ancient temples, shrines, and Nara’s cultural legacy infuses every bottle, while artisanal methods such as kimoto brewing create diverse and distinctive characters that define Nara sake.

The generous pour of nama-zake (unpasteurized sake) overflowing the masu (wooden box) is called “mokkiri” – a traditional serving style that demonstrates hospitality and generosity. This presentation enhances the experience by allowing you to enjoy the compatibility with the wood’s aroma and the freshness of the sake. Savor the overflowing nama-zake while immersing yourself in the stories of the ancient capital’s culture and history.
